Homemade Strawberry Ice Cream

July 2008

2 cups half and half
2 cups whipping cream
2 cups sugar
1 tablespoon vanilla
1/4 teaspoon salt
4 eggs
4 cups strawberries, mashed (add a little extra
sugar to sweeten fruit)

Mix and allow chilling over night before freezing in a 4 quart
churn.  Note:  Add enough whole milk to fill the churn
to 1 gallon.

For the 4-quart, use about 25 pounds of crushed ice and
about 2 cups rock salt>

To begin, place the electric ice-cream make inside a large dish-pan
or tub; this will catch the draining melted ice and also will be
used to pack ice around the churn to allow the ice-cream to ripen. 
When the motor stops, pack ice and salt in dishpan around ice-cream maker,
and then cover with towels; allow setting 2 to 4 hours.
